1 Easy Crock-pot Chicken, 3 Recipes

Sundays are my favorite day to prep food for the week.  I usually hard boil eggs, cook brown rice, roast veggies, and make a few meals that reheat well.  I recently had a friend of mine tell me how she makes chicken in a crock-pot and then uses it to make a basil avocado salad… which sounded so yummy I had to try it on my own.  The nice thing about this chicken is it makes such a juicy, pull apart, flavorful chicken you can turn it into a dozen dishes afterwards.  I saved it in a container and used in different dishes throughout the week, including a few below!

Crock-pot Chicken Ingredients:

  • 2 lb. chicken breasts
  • 1 tbsp. sriracha sauce
  • salt and pepper, to taste
  • 1 tbsp. Cajun seasoning
  • 1 tsp. onion powder
  • 1 tsp. natures seasoning
  • 3 cloves of garlic, chopped
  • 16 oz. chicken stock
  • 1 onion, chopped
  • 1 tbsp. mushroom powder (I put dried mushrooms into my vitamin and blend on high until they turn into a fine powder and keep them in my pantry in a ziplock).

Directions:

  • Season chicken with sriracha, salt and pepper, Cajun seasoning, onion powder, and natures seasoning.  Place chopped onions on the bottom of the crock-pot, top with chicken, mushroom powder, and pour in stock.  Place on low heat for 8 hours.
  • Once the chicken is done, remove it from the slow cooker, shred, and save for whatever recipes you have during the week!
  • I puree the stock afterwards and save for dishes for the week.

Avocado Basil Chicken Salad Ingredients & Directions: (recipe adapted from paleocupboard.com)

  • 1/2 cup fresh basil leaves
  • 2 avocados
  • 2 tbsp. olive oil
  • 1 lemon, squeezed
  • 1/8 tsp. garlic powder
  • 1/2 tsp. Cajun seasoning
  • 1/8 tsp. red pepper flakes
  • 1/4 cup cilantro
  • 2 tsp. Italian or parmesan cheese
  • salt and pepper, to taste

Directions:

  • Take the leftover chicken and combine with avocado basil dressing.  I like to serve this as a wrap with some pico de gallo.
  • Be sure to cover the chicken salad well, press foil or saran wrap against it so it doesn’t brown.

Directions:

  • Combine chicken with pesto and serve over a salad or in a wrap!  There are so many different ways to serve, these are just a couple of ideas.
