Sriracha Chicken

Today was one of those days where I didn’t feel like going to the grocery store so I decided to make due with what I already had in the fridge and freezer.  I am not a huge fan of chicken… in fact, I probably only cook it about 2-3x a month…. but this marinade changed everything for me – it was amazing.  The spicy/sweet flavor of the Sriracha mixed together with sesame oil and a few other spices… gave the chicken the most amazing flavor.  Super easy and fast, it’s the perfect dish for any night of the week!

Ingredients:

  • 1.5 lb boneless skinless chicken breast, cubed
  • 1.5-2 tbsp. sriracha sauce
  • 1.5-2 tbsp. sesame oil, plus 1/2 tbsp. to coat the pan
  • 1 tbsp. soy sauce
  • 1 tsp.. honey
  • 1/2 tsp. onion powder
  • 1/2 tsp. garlic powder
  • 1/4 tsp. ground ginger
  • 1/2 tsp. salt
  • 1/2 tsp. pepper

Directions:

  • In a large ziploc, combine the chicken and all the seasonings.  Coat the chicken well and marinade for at least 1 hour, preferably 2, or overnight.
  • Heat a medium size pan, drizzle with about 1/2 tbsp. sesame oil, and add the chicken.  Cook the chicken until the first side browns (do not keep stirring), just let it sit and get a good sear, then turn over.  Cook the chicken until done, about 10 minutes, and serve!  It’s that easy!!!
  • I like to serve over rice or with a good egg drop soup :).

      Thanks girl!!! Yes well, sriracha on anything is delicious, even brussel sprouts (I’m a brussel sprout hater 🙂 ).
