Turkey Tacos 21 Day Fix Approved

Last week I started my 21 day fix diet again and I am finally, actually staying on track with it – I have been eating well, drinking less (no more weeknight red wine for me 🙁 ), and exercising for about a week now, and I am feeling so great!!  So I decided to make a few recipes that are 21 day fix approved, but still filling and tasty.  Turkey tacos are something my step-mom used to make all the time for me growing up – I couldn’t get enough.  I jazzed it up a little bit with a few extra ingredients, and threw out the taco shell and tortilla to make it a little healthier and oh my goshhhh it was so yummy.  I also had some extra zucchini for the farmers market so I thought why not throw that in too!

One of the blogs I love to follow is Made With Love, and Alicia is the reason I started doing this diet.  It isn’t even really a “diet” which is my favorite part about it – it’s really just portion control, and I am still able to eat all the foods I love.  She does an awesome group every month to help you keep accountable on the diet and gives you great recipe and food ideas.  If this is something you are interested in… be sure to look her up!!

Turkey Tacos

We are leaving on a family trip to Aspen tomorrow and I am getting so excited!!!!!!!!  That’s another one of the reasons I wanted to get a jump start on my clean eating.  Every time we are there it’s 12 hour days filled with hiking, biking, tennis, walking, anything outdoors you can think of – my dream life – but if you aren’t in shape it is definitely a little bit of a struggle.  Plus, it’s my boyfriends first time coming with us so, no time for sleep, I’ve gotta show him everything!!!

Also… I am obsessed with this new Yellowbird Serrano hot sauce I found – you can buy it here, or whole foods.  The flavor is sooo good – a little bit of heat, and a really nice mild flavor.

Turkey Tacos 21 Day Fix Approved

Prep Time: 5 minutes

Cook Time: 15 minutes

Total Time: 20 minutes

Serving Size: 4

Ingredients

  • 1 large zucchini, chopped into 1/4 inch pieces (and any other veggie you would like to use - onion, squash, etc.)
  • 1 4 oz. can diced mild green chiles
  • 1 lb. ground turkey (I use lean turkey breast)
  • 1 packet taco seasoning mix
  • 2/3 cup water
  • 6 oz. pico de gallo
  • 6 oz. guacamole
  • 4 cups of lettuce, shredded or torn
  • avocado oil, enough to coat pan
  • salsa to top (I LOVEEEEE Yellowbird sauce, serrano flavor)

Instructions

  1. In a large wok or saute pan, heat a drizzle of avocado oil. Add in the zucchini, season with salt and pepper, and saute until they are al dente. Set aside one they are done, and add another drizzle of avocado oil to the pan. Cook the turkey meat until it begins to brown and then drain any excess juices out. Add back in the zucchini, green chiles, season with the taco packet, add water, and cook on LOW another 8 minutes.
  2. Serve the turkey tacos over a bed of lettuce and top with guacamole, pico de gallo, salsa, and any additional ingredients you wish to add!!

    Since I’m currently pregnant I can’t really “diet” but am trying to eat as clean and as healthy as I can. This is definitely one of the meals I usually go to.. I was subbing tortillas with lettuce wraps but I love the way it looks as a salad AND I am intrigued by this sauce! I usually go for Valentina’s but I will be on the look out for this.. I love trying new hot sauces!

      I hear you girl!!! Plus I never thought of “dieting” as really being healthy… I think it’s all about portion control. Plus the fact that this is like a 15 minute recipe… once the baby comes I’m sure you will need more stuff like this!!! Thank you for the comment 🙂 And YES TRY THE HOT SAUCE!!! It’s so yummyyyy
