Asian Slaw

I have never been a huge salad person.  I wish I was but it’s just not me.  I just started this new program though called “21 Day Fix”, and I am determined to become a healthier eater!  So I ordered up the 21 day fix kit and I’m working on all kinds of new recipes that work well with it.  It’s basically a portion control program, which I seriously need because I usually fill my plate like a caveman who just hit the food lottery.  I love it!  It makes my food prep for the week so much easier, and my boyfriend is doing it with me which makes it even better. 

This recipe for asian slaw is so so yummy you wouldn’t even believe how healthy it is.  You can top it with shrimp, chicken, steak… anything or nothing, and it makes a perfect meal!  The dressing for it is so decadent, it would be amazing in a stir fry.

The program makes food prep so incredibly easy… here is some of the stuff I came up with:

  • Sauteed black beans and jalapeno pepper
  • Celery and carrots with hummus
  • Raw corn for snacking
  • Hard boiled eggs for breakfast

Asian Slaw

Serving Size: 4

Ingredients

  • 1/8 cup honey
  • 1/8 cup vegetable oil
  • 1/8 cup rice vinegar
  • 1/2 tbsp. soy sauce
  • 1/2 tsp. sesame oil
  • 1/2 tbsp. low fat creamy peanut butter
  • pinch of salt
  • 1-2 tsp. freshly grated ginger
  • 1 garlic clove minced
  • 1 tsp. black sesame seeds
  • 14 oz. shredded coleslaw
  • 1 zucchini, spiralized

Instructions

  1. Combine dressing ingredients (except sesame seeds) and whisk until blended well. Combine the dressing with the coleslaw, zucchini, and sesame seeds and mix well.
  2. Serve with chicken, shrimp, tofu... anything you wish, or eat on its own!! So tasty and flavorful! I served mine with black beans and homemade corn tortillas.

    I love salads! I bet this would be a fabulous addition for Asian Tacos! Toss some shrimp in…yum!

    This salad has all the flavors that I love in it. I’ve often thought about joining the masses and doing the 21 day fix, but not sure I get the husband on board.

      It’s so funny you say that – my boyfriend was against the idea of doing it with me until I ordered it anyway and packed his lunches now he really likes it!!!

    I am all about salads! I LOVE them! Give it ia good try you might surprise yourself once you get through the 21 days! This salad looks awesome!
