Beet and Goat Cheese Salad

I get on these food kicks where I make something I like and try to brainstorm a million different recipes with that certain ingredient.  Today’s fix – BEETS!  As soon as I saw them at the farmers market I bought them and started dreaming of all the different things I could do with them.  Oh I love beets  so much…. roasted, pickled, love em!  So I made this as the “salad” before dinner last night, and oh boy it was so amazing.  The sweetness of the beets and goat cheese, accompanied with the balsamic and the tiny bite of the toasted pine nuts… it was perfect.  And best of all… it was SO simple but still so elegant. 

Beet and Goat Cheese Salad

Ingredients (serves 2):

  • 4 beets
  • 3 sprigs of thyme
  • olive oil, about 2-3 tbsp.
  • salt, to taste
  • 1/4 cup goat cheese
  • 2 tbsp. good balsamic vinegar – I am obsessed with this one
  • 2 basil leaves, chiffonade
  • 1/4 cup toasted pine nuts

Directions:

  • Pre heat oven to 400 degrees F.  Peel beets and cut off ends.   Place them in foil, drizzle with olive oil, salt, and thyme and close the foil around them.  Bake for 35-40 minutes, then remove and cut into quarters.
  • Place the beets neatly on a plate and top with goat cheese, basil, pine nuts, and a drizzle of balsamic and olive oil.  I also like to sprinkle a tiny bit of salt here.  Enjoy!

    This looks like a very heatlhy salad. I love the beets in this recipe. Goat cheese adds a great texture.
