Best Ever Salmon with Fennel Butter Sauce

Let me begin by saying I am not the biggest fan of salmon… and that is an understatement.  I try to force myself to eat it a couple days a week because it’s so good for you, but I have never been excited about it – until this recipe.  I have tried so many different salmon recipes and I am NEVER impressed… but after some trial and error, I think this is my best fish recipe yet.  Enjoy 🙂

Ingredients:

  • 2 Salmon Fillets (7 oz. each – preferably Alaskan King, its healthier than farm raised)
  • 1 tsp. fennel seeds
  • 1/4 cup butter, melted (1/2 stick)
  • 1 tbsp. onion or shallots, minced
  • 1/4 tsp. dried Italian seasoning
  • 1/4 cup water
  • 1 large fennel bulb with fronds on (the part of the leaves that look like dill)
  • 1 tsp. of the fennel fronds
  • about 2 tsp. fresh lemon juice
  • Salt and pepper to taste

Directions:

  • Preheat oven to broil.  In a small nonstick pan, toast fennel seeds until fragrant, about 1-2 minutes.  Transfer the seeds to a small bowl and mix in the melted butter, minced onion, Italian seasoning and diced fennel fronds.  Season lightly with salt and pepper.
  • In the same nonstick pan, melt about 1 tbsp. of butter and add sliced fennel bulb and 1/4 cup water.  Cover and cook until fennel starts to get a little more tender, about 8 minutes.  While the fennel is cooking, start on the salmon.
  • Season the salmon with salt and pepper and squeeze fresh lemon juice on the fillets.  Drizzle the bottom of the baking sheet with a little olive oil and lay salmon fillets on top.  Pour the butter and fennel seed sauce onto the salmon, and place in oven.  It will only take about 7-9 minutes to cook on broil so watch closely.  While the salmon is in the broiler, finish the fennel.
  • Uncover the fennel after 8 minutes, and saute another two minutes, until it turns a bit golden.  Pour this onto the salmon for the last two minutes it’s in the broiler.
  • Option after the salmon is done – squeeze a touch more lemon juice on top and serve!!
