Cauliflower & Portobello Steaks
Houston is such a big city, over 2 million people to be a little more exact, but no matter where I go I always seem to find someone I know. For instance today… I’m shopping at Central Market and who do I run into? My step-mom! No surprise there actually, seeing as she is one of the biggest reasons for a huge chunk of my cooking knowledge and she’s always at one grocery store or another prepping for dinner. So, we spent the rest of the trip walking around, and I spent the majority watching what she put into her basket and did the same with mine :). One of my favorite things is the constant learning I get from watching her cook, and also the interest she takes in what I do. I am super amateur hour compared to her, yet she is always asking me questions about what I pair with what, and how I cook certain ingredients. It’s a nice feeling :).
Can you tell I haven’t been able to blog in a while? My thoughts are just sort of spewing on this post but whatever, it’s my blog :). Now, onto the recipe. I’m trying oh so hard to be good (per my usual Monday bright spirit about starting the week off super healthy), and cauliflower for some reason was on my mind today. I love doing meatless Mondays, so I figured why not some sort of cauliflower “steak” to satisfy my Texas stomach.
This recipe is fabulous. The cauliflower and portobello roasted the way they are make the natural woody flavors seep out, and the basic seasoning of the recipe allows the main ingredients to shine. I topped it off with my garlic basil pesto recipe to give it an extra kick, and wow. I literally ate almost an entire head of cauliflower (it’s not often I say that), and ALL of the portobello. I paired it with an amazing quinoa salad (recipe coming tomorrow), and I left the table feeling amazing, which is often not the case when I overstuff myself with tasty things.

One of my other favorite things about this recipe – it reheats JUST AS GOOD the next day!! For those of you who pack your work lunches and are looking for healthy ideas… I paired it with an amazing and healthy herbed quinoa salad (recipe will be up tomorrow), and it tasted amazing!
Ingredients
- 1 head of cauliflower, stem intact and cut into 1 inch pieces lengthwise
- 1 or two portobello mushrooms cleaned
- olive oil
- salt
- white pepper
- Italian seasoning
- 2 parsnips peeled and chopped roughly
- basil garlic pesto (about 2 tbsp.)
- 10 sprigs of thyme
Instructions
- Pre heat oven to 450 degrees F. Line a baking sheet with foil and then parchment paper. Brush with olive oil and sprinkle generously with salt. Lay the cauliflower steaks down on the parchment along with the portobello mushrooms (stem side down) and parsnips. Brush tops with olive oil, sprinkle again with salt, then Italian seasoning, and white pepper. You will roast in the oven for 10 minutes on each side. Once the first 10 minutes has passed, remove from the oven and very carefully flip all the vegetables over, making sure not to let the cauliflower fall apart. Lay the fresh thyme sprigs on top of the portobello mushroom, and drizzle all the vegetables again with a touch of olive oil and sprinkle with salt. Place back in the oven for final 10 minutes.
- Once the vegetables have roasted and have a nice golden color, set aside to cool. Remove thyme from portobello, and then top with cauliflower with basil garlic pesto lightly drizzled. Enjoy!

I lived in Houston around 1988 for one year while my husband was working on a project. We enjoyed our time there. Will have to try your Texas “steak” recipe.

I love cauliflower !! It’s my go to vegetable, I always steam it, roast it, purée it and most recently have made cauliflower rice out of it. Occasionally I hear from my husband, “Cauliflower again!”, well Bobby, I just learned a new way to make it.

First of all, I love this. Second of all, I love the idea of the pesto on the cauliflower. I roast a lot of cauliflower over here and never have I thought to top it w/ pesto!
