Curry & Vegetable Cauliflower Pizza
India has for a long time been a dream destination of mine. I think it all started with the culinary theme movie, The Hundred-Foot Journey, because what great trip isn’t inspired by food? I was immediately drawn to the country because of the food and culture, fascinated by how different it was from my own. After all, food is the best way to travel without having to hop on a plane. I hate to even admit that the first time I really started to explore Indian food leaving that movie, mouth watering with my iPhone in hand, searching for any and all Indian restaurants around me to try.
I’m lucky enough to live in a city that is one of the most diverse, therefore I can pretty much get whatever type of cuisine I want to. Naturally after my first brush with saag paneer and lamb curry, I have never looked back. Of all the Indian restaurants we have here in Houston, Pondicheri has always remained close to the top of my list. I was also elated to find out that Chef Jaisinghani is one of the five chefs being recognized by the James Beard Foundation as a Best Chef Semifinalist! Naturally, I had to run back over to this hot-spot and re-familiarize myself with all of my favorite dishes.
This is where my inspiration came from in this Indian curry and vegetable cauliflower pizza recipe!
I have to say, this is one of the many aspects I love about Indian culture – look at the vibrant colors you find everywhere.

As usual everything was amazing, but something that stood out to me was the fact that she has partnered with Walmart in supporting local farmers, specifically, by cooking with mini San Marzano tomatoes from Village Farms in Marfa, TX.
And now…. for the pizza you have all been waiting for…..
If you are looking for these locally grown tomatoes, be sure to check out Walmart and look for the Village Farms logo! They were so intensely sweet and fresh, I didn’t even have to add a touch of sugar to the sauce.
The other fun thing about this recipe is the fact that you can really top it with anything you want. It would have been great to add some leftover curry lamb, chicken, you name it. I stuck to vegetables though because I wanted the spiced chickpeas to be the shining star.

Curry & Vegetable Cauliflower Pizza
Ingredients
Crust:
- Any store-bought cauliflower crust will do. I recommend Trader Joe's or Cali'flour Foods Pizza Crust. If you want to make your own there are many great recipes out there. I suggest this one!
Curry Tomato Sauce:
- 2 10 oz. bags Village Farms mini San Marzano tomatoes, each tomato cut in half
- 1/2 onion minced
- 2 garlic cloves minced
- Drizzle of olive oil
- 4 tsp. curry powder
- 1/4 tsp. ground cardamom
- 1/4 cup water
- Salt and pepper to taste
Roasted Chickpeas:
- 1 15.5 oz can chickpeas, rinsed and drained
- 1-2 tsp. fennel seeds depending on how much you like fennel seeds, add more or less
- A few dashes of paprika just enough to coat
- A few dashes of chili powder just enough to coat
- Salt and pepper to taste
- A drizzle of olive oil
Pizza Toppings:
- 1/2 red onion roughly chopped
- 1 red or green bell pepper chopped
- 1 ear of corn cut off the cob
- 1/4 cup shredded cheese I like a blend of Parmesan, Asiago, Fontina, and Provolone
Instructions
- Begin by roasting the chickpeas. Pre-heat oven to 450 degrees F. Drain, rinse, and dry the chickpeas. Line a small sheet pan with parchment paper and lay them out in a single layer. Drizzle with olive oil and season gently with salt, pepper, fennel seeds, chili powder, and paprika. Roast for 22-25 minutes. Once the chickpeas are done roasting, let them rest for 15 minutes, this is when they will develop their crunch!
- While the chickpeas are roasting, make the tomato sauce. In a medium size sauce pan drizzle olive oil and saute the onion, garlic, and tomatoes on medium-high, stirring until softened, about 15 minutes. Add in the curry powder, cardamom, salt and pepper half-way through. After about 15 minutes, add in 1/4 cup of water and turn off the heat. Blend the sauce with a hand blender until smooth. Taste and adjust seasoning accordingly. Then, pour the sauce into a small bowl and set aside.
- Prepare the cauliflower crust according to package instructions.
- Set oven temp to broil. Top the pre-cooked crust first with the curry tomato sauce, cheese, and then your desired toppings. Broil for about 5-7 minutes, until you see the toppings have begun to char. Remove the pizza from the oven, let it cool, slice, and serve!
