Dehydrated Peppers

My mother used to dehydrate countless things when I was younger – tomatoes, peppers, fruit – you name it.  I guess as I have gotten older I’m becoming more and more like her because I find myself doing all the things she used to do for us as kids, and dehydrating has to be one of my favorites (let’s just hope I don’t develop some of the weirder hobbies like cat shows :/…).  She always has much growing in her garden we are constantly coming up with new ways to keep everything fresh or preserve it, and dehydrating is such an amazing way to get so much more time  and flavor out of vegetables and peppers.  

Peppers

 



Dehydrating pepper is so easy, especially if you have a dehydrator.  This is the same one I use for my beef jerky recipe, it’s the Nesco Food Dehydrator, and it’s only about $75.00!!!  I absolutely love this thing!

Ingredients:

  • Any type of pepper, sliced (or if small you can leave whole), and de-seeded

Directions:

  • Make sure you open a window or place dehydrator in a well-ventelated area.
  • Once you have sliced and de-seeded all the peppers, dry them thoroughly.  You want all the slices relatively the same size so that everything dries in the same amount of time.  Lay out the peppers on each tray with plenty of space between them to allow for good air flow.  If your dehydrator has a temperature setting, you want to set it to 135-145 degrees for about 8-12 hours, checking every so often because some of the smaller pieces may be done first.
  • Once the peppers are done, store in an airtight container or I like to crumble them to make pepper flakes and use in my cooking.  They will last up to a couple years and they also make great gifts!!!

    I love this! Those peppers were picked fresh from my very small hap-hazard city garden (I use all my dirt). I remember the year that I had a HUGE crop of habaneros, jalapenos, and other hot peppers. When I began to wash & prepare them for sauce making and dehydrating, I was overcome by the heat of the peppers, and ended up wearing a dish towel around my face (robber style) and sunglasses to process them. My eyes water just thinking about that time. . .
