Oven Roasted Herbed and Cinnamon Pee Wee Potatoes

Serves: 4
Ingredients
  • 1.25 lb. dutch yellow pee wee potatoes (or any small yellow potato halved will do)
  • 1 sprig fresh rosemary, minced
  • 5 sprigs of fresh thyme
  • 2 sprigs fresh oregano, minced
  • salt and pepper, to taste
  • ¼ tsp. paprika
  • 1 tsp. rosemary salt
  • ⅛ - ¼ tsp. cinnamon
  • olive oil, enough to coat, about 4 tbsp.
Instructions
  1. Pre-heat oven to 400 degrees F.
  2. If the potatoes aren't all the same size, you may need to cut the larger ones in half. In a large bowl, toss potatoes with all of the ingredients. Place the potatoes on a small baking sheet and place in the oven. Bake for about 20-25 minutes, until they are golden.
