1.25 lb. dutch yellow pee wee potatoes (or any small yellow potato halved will do)
1 sprig fresh rosemary, minced
5 sprigs of fresh thyme
2 sprigs fresh oregano, minced
salt and pepper, to taste
¼ tsp. paprika
1 tsp. rosemary salt
⅛ - ¼ tsp. cinnamon
olive oil, enough to coat, about 4 tbsp.
Instructions
Pre-heat oven to 400 degrees F.
If the potatoes aren't all the same size, you may need to cut the larger ones in half. In a large bowl, toss potatoes with all of the ingredients. Place the potatoes on a small baking sheet and place in the oven. Bake for about 20-25 minutes, until they are golden.
