Canola or vegetable oil for frying (enough to fill a pan about an inch)
4 eggs, beaten
½ tsp. paprika
⅛ tsp. cayenne
½ tsp. seasoning salt (I like natures seasoning or lawry's)
1 box of matzo, crushed into tiny pieces
1.5 lb. chicken breast tenders
salt, to taste
Instructions
Season beaten eggs with paprika, cayenne, and seasoning salt. Dip the chicken breast tenders first into the eggs, then into the matzo crumbs. Once you have all the tenders coated heat the oil.
Pour oil into a frying pan, about 1" depth, and heat. Once you have reached a hot enough temp. to fry the chicken (about 375 degrees F), place a few pieces of chicken in at a time. Fry until they are golden on both sides, about 10 minutes. Transfer to a plate covered with paper towels and let them cool.
Season with salt and serve!
