H-E-B Curbside + Thai Coconut Curry Instant Soup Jars
I’m sure everyone can relate to this, but weekends are so precious to me. I treasure this time because it’s when I actually get to do some of the things that really make me happy and feel whole, like cooking and blogging. My blog originally started as an outlet for me to keep track of recipes I cook and share them with my family, but now it has developed into so much more than that. It’s my outlet for happiness, sadness, anger, frustration, you name it, and has become a part of of who I am; which leads me to the purpose of this post – time!! As much as I LOVE cooking, time is something I find I never have enough of, and why convenience services such as H-E-B Curbside have become so valuable to me!
H-E-B Curbside is an online service where you place your order for groceries and pick them up in as little as 4 hours – and you don’t even have to leave your car! It’s convenient and great to use if you have errands to run, and very helpful for bulky items or dinner party supplies. You simply place the order online as far ahead as you would like, and then pull into your H-E-B parking lot and follow the signs for curbside pickup. Then, you text the number from your parking space sign and voila! Your groceries will be in your car within minutes!
I placed my first curbside order last Friday night for Saturday pickup (which took a grand total of 10 min), and drove over right after my spin class. Within 3 minutes not only were my groceries being loaded into my car, but the quality of every single piece of produce they picked for me was perfect. That’s always my biggest worry when placing orders like this, but everything was top notch quality. And just like that, I was ready to prep for our football Sunday get together!

- Service between 7:30AM-9:00PM
- Place your order by 9PM to get as early as 7:30AM the following morning, or allow 4 hours for same day pickup.
- Cost is a low $4.95!
- Place order online using the search bar for fast adding.
- Find the H-E-B Curbside signs in the parking lot for pickup locations.
I ordered these Curbside groceries for football sunday and weekday food prep, and I wanted to show you these awesome 3 minute Thai coconut curry instant soup jars that I made with the ingredients!
This recipe is insanely easy, and was bursting with fresh and amazing flavors. I highly recommend this for your lunch prep going forward!! You can also play around with what you put in the jars, depending on what you have around the house or enjoy to eat!
Thai Coconut Curry Instant Soup Jars
Ingredients
- ⅓ cup light coconut milk
- 3 tsp. Soy sauce
- 1 Tbsp. thai green curry paste
- ¼ tsp. Umami powder or salt
- ½ vegetable bouillon cube
- ½ carrot cut into ribbons
- 1 small head of baby bok choy
- Vermicelli noodles 1 handful
- Cilantro about ⅛ cup
- 1 green onion sliced
- Boiling water enough to cover ingredients, about ¾ of the jar
Instructions
- In a small bowl, combine the coconut milk, soy sauce, curry paste, bouillon cube, and umami powder or salt. Mix well and place at the bottom of a mason jar. Top with bok choy, carrot ribbons, vermicelli noodles, cilantro, and green onion.
- Either store in the refrigerator or, if you are ready to eat, top with enough boiling water to cover the ingredients, no more than ¾ up the jar. Seal the lid and let the soup steep for 3 minutes. Enjoy!
