I’ve been walking a ton lately in the evenings with my dog Bailey after a long jiggly and glutenous break of seriously good eating, a lot of cooking, and a new relationship, which makes everything naturally move to the side burner, but that’s where the help of my fitbit comes in – to motivate me after sitting at a desk for 8 hours and only having walked 3k steps… when it should be more like 10k.

So, in honor of my new let’s get back in shape attitude, I’ve decided to give away a couple of my favorite things to help any of you having the same issues get back to where you want to be!!  These are a few of my FAVORITE things I really can’t go a week without.  All you need to do to enter this giveaway is simply comment on this post below answering this question:  What is one of your favorite healthy workweek dinners to make? Gina Homolka’s new cookbook!!!!!!  I have been following her blog for years, she is amazing.  All of her recipes are so healthy BUT reallyyyyy tasty.  It’s such a helpful cookbook for weeknights when you need ideas of fast, healthy meals (she also puts weight watchers points to everything which is super helpful to people following that diet).  She is so talented I just love her!!  Third…..

A slow cooker!!!!!  These make my weeks one thousand million times easier when I have a full day of work and no time to cook.  I have this one and LOVE it.

So… I hope this inspires everyone to live a little healthier because why not?  There are so many tool that make it so easy so let’s just do it okay?!!

    I love making grilled chicken with lots of veggies, roasted tomatoes, artichokes, & asparagus are some of my favorites!

    What a fun giveaway! I’m not sure how “healthy” this dinner is, but I love grilling chicken with veggies and serving cheese potatoes on the side! It’s my go-to work week dinner!

    One of my favorite worknight dishes is Cod over Baby Spinach w/Shitakes and onions en Papillote. Really easy and you don’t have to get fancy with parchment paper…tin foil works just fine. Takes about 30 minutes tops with 15 minutes cooking at 400…comes out with a nice jus if you add a lil fish stock and fresh squeezed lemon juice. YUM!

    My crockpot is my go to! I don’t have a specific recipe, just toss a hunk of meat in with whatever seasonings appeal to me that day. Then when I go home at lunch I will toss in the veggies- usually carrots and onions and voila! Simple healthy dinner ready when we all come barreling in the door before running back out again for whatever activity the day has planned!

      btw, my trusty friend has seen better days. I have to jiggle the knob to make sure it actually starts heating up. Last week I came home to a still icy cold pork roast!

    I love to saute kale in olive oil with onions garlic peppers tpped with soft boiled egg and avacado. Any veggies that need to be used up will do. Healthy quick and easy!

    My go to healthy meal — for when I’m not just wanting a giant salad for dinner — is salmon marinated in equal parts soy sauce and maple syrup, with some crushed garlic cloves, that I bake in the oven for about 15 minutes. That plus a side of chopped up zucchini and squash, leaves me satisfied without the guilt!

    I LOVE lightening up pizza! Either by making a cauliflower crust, or loading “meaty” veggies up with some healthy and delicious pizza toppings. The crust route is more time consuming…so the other day I pre-roasted some eggplant slices (although I think they would be equally as great if you used portobello mushrooms) and topped them with marinara, some low-fat mozz and parmesan, lean italian sausage and steamed kale. They were to die for and totally quelled the pizza craving!

    My favorite week day healthy meal is definitely baked salmon! Tastes great no matter how you prepare it (teriyaki sauce or just white wine & lemon juice) & is ready in less than 30 minutes.

    My favorite healthy weeknight go to is to roast veggies simply w/ olive oil, salt, pepper and garlic and toss them with couscous or quinoa

    I LOVE making baked skinless boneless chicken at least once a week. I usually pair it up with boiled corn on the cob and or a big fresh garden salad. My family LOVES my home cooking.

    Baked wild caught salmon marinated w olive oil, lemon juice crushed garlic, sea salt, cayenne pepper, fresh parsley and a dash of balsamic vinegar. Serve it with whole wheat couscous and roasted asparagus !

    My “go to” is a chicken gnocchi soup. I put double tolhe veggies (onion, celery, carrots) and substitute cream with low-fat milk. That’s my healthier version, and my go-to for a quick dinner since I pre-cut and package my veggies. 🙂

    I think this might even be a skinny taste recipe (tho maybe not in the cookbook): raw chicken sausage with casings removed and roasted with all kinds of veggies that have been drizzled with olive oil. Fast and super yummy!

    I usually bake a few chicken breasts to keep on hand for the week for quick dinners, like zucchini noodles with veggies and tomato sauce. It only takes a few minutes to throw together and get it on the table, and it’s delicious!

    Sriracha greek yogurt chicken on the grill with grilled brocollini! During grilling season it is so easy to be healthy on weeknights, I just throw some meat in a bag with seasonings in the morning to marinate while I am working, then toss some veggies in a bit of olive oil, salt and pepper and wrap in aluminum foil. Then hand everything off to my grill master husband to cook!

    We do chili in the crock pot….all healthy with tomatoes, good for you protein in the form of beans, corn and low fat meat of ur choice…it’s easy, dump everything and forget it…..

    I have been trying to stay on a health kick. I exercise regularly and learning how to eat healthier (we never eaten bad but it does need some tweeking) Making food in a crock pot is one of my favorite ways to cook. SO easy and tasty!

    Spaghetti with a sauce I make myself. I use very little of the spaghetti because there is so many veggies and ground turkey in the sauce.

    Last night I made Tuscan Chicken, adding in twice as many veggies that the recipe asked for, adding almost three times fresh herbs than recipe while omitting the salt. Made a huge batch, enough to share with my office today at lunch. So happy to share a healthy delicious meal!
