Oven Roasted Herbed and Cinnamon Pee Wee Potatoes
Despite my tendency to fawn over time-consuming, impressive, and overly complicated dishes, I sometimes find my way back to the simplest of recipes which renew my faith in the idea that without a doubt, fresh ingredients is really all we need to create something beautiful in the kitchen. Today was one of those days. I love sharing simple recipes that take virtually no time to whip up because lets face it, the average person doesn’t have time to spend 3 hours making some sort of fancy shmancy meal after they have been working all day and finally beat the traffic home. All they are really wishing for is a hot meal and time to catch up on tv shows.
This morning I woke up feeling renewed, inspired by some incredible Houston 60 degree weather which I knew I would only get for about 11 more minutes, so I savored every moment of it. The first thing I did, which is the first thing I do every morning, was open my instagram at 5:45 am and start planning out what I was going to cook for dinner. By 3pm I had printed out about 25 recipes, each pretty intricate, and I was dying to make every single one. This is when I stopped. There are some days when all I want to do is to spend the next 4-5 hours in the kitchen, creating tasty foods to photograph and eat up, but today was not one of those days. I was really hoping to just spend the rest of the day outside with my dogs. So I put away all my recipes and went back to the basics (as Ina Garten would say 🙂 ). It’s so important for all of us to do this sometimes!
I know we have all made oven roasted potatoes before, but sometimes we forget to go out of the box, and how easy it is to change the old classic with just a few little pops of fresh herbs or spices. My garden is overflowing right now with herbs, so I thought why not just throw in a few things with a an interesting spice and see how it comes out?
Don’t you love the color the fresh herbs give?! Also this salt is the bomb…. yes I just said that…. but really get it.
- 1.25 lb. dutch yellow pee wee potatoes (or any small yellow potato halved will do)
- 1 sprig fresh rosemary, minced
- 5 sprigs of fresh thyme
- 2 sprigs fresh oregano, minced
- salt and pepper, to taste
- ¼ tsp. paprika
- 1 tsp. rosemary salt
- ⅛ - ¼ tsp. cinnamon
- olive oil, enough to coat, about 4 tbsp.
- Pre-heat oven to 400 degrees F.
- If the potatoes aren't all the same size, you may need to cut the larger ones in half. In a large bowl, toss potatoes with all of the ingredients. Place the potatoes on a small baking sheet and place in the oven. Bake for about 20-25 minutes, until they are golden.

Simple preparations are often the best ones, these roasted potatoes sound wonderful, love all the fresh herbs and the addition of cinnamon!
