Rosemary Garlic Potatoes & Carrots w/ Kuhn Rikon’s Hotpan

I have to admit, the term “soft-cooking” was unfamiliar to me until I received this hotpan from Kuhn Rikon, and now I wish I had known about it sooner!  The purpose of the hotpan is to soft-cook your food (made possible by its air-tight lid) rather than expose ingredients to hot temperatures for long periods of time, which destroy many of the vitamins and nutrients we need.  The hotpan will soft-cook just about anything – meats, vegetables, grains – it’s extremely versatile and easy to use, and you can’t beat all the health benefits it provides. Definitely a must have in your kitchen!

I decided to test out my favorite roasted potatoes recipe and it could not have turned out better (I actually prefer it to the roasting method!).  The best part – this pan allows you to walk away after about ten minutes, and do whatever else you need to without worrying about the food burning or overcooking!  Thank you Kuhn Rikon for partnering with me on this post!

(I received this product for review purposes.  All opinions are completely my own based on my experience.)

 Ingredients:

  • 1 lb. red potatoes, quartered
  • 2 bunches fresh small carrots, tops on (approx. 8 carrots)
  • 1 sprig of rosemary, diced
  • 4 garlic cloves, minced
  • 4-5 tbsp. avocado or olive oil
  • salt and pepper, to taste
  • 1/4 cup water

Directions:

  • Combine all ingredients except water in a bowl, mix well coating all the carrots and potatoes with the oil, rosemary, garlic, and season well with salt and pepper.
  • Place the hotpan on the stove, heat on medium-high and pour the potatoes and carrots in.  Saute for about 5 minutes, then deglaze with 1/4 cup water, cook for another two minutes, and cover with the hotpan top.  Continue to cook on medium heat for ten minutes, then remove from heat and place in the insulating bowl for fifteen minutes.
  • The carrots and potatoes will come out with the perfect consistency and allow you to cook whatever else you need to while they finish!
  • After fifteen minutes, remove top and serve!

Hotpan Facts:

  • Foods are cooked over low heat in their own moisture, which helps them retain more nutrients, and have a more succulent, juicy texture at the end.
  • Many methods of cooking vegetables can destroy over 30% of nutrients, not to mention the other large percentage that is lost in the time it is pulled from the ground to the time it gets to your plate.  Soft-cooking is a way to retain most vitamins and nutrients.
  • It also uses 60% less energy AND keeps food warm up to 2 hours!

    Those veggies are so vibrant. I have been ‘soft cooking’ for a while now with my own cookware and had amazing flavorful results.

    Sounds like it would be perfect for cooking for a crowd, by being able to cook something and have it keep warm while everything else is being prepared!

    Nice to see a recipe for the Hotpan, just received mine and apart from a cooking chart
    there is very little info on cooking with it. The Hotpan cookbook featured on Amazon UK
    does not get very good feedback. It seems to be a translation from swiss to English.

      Martin, I agree!! I have been doing a lot with my hotpan also, including making a lentil soup…. it is so great for keeping things warm but also soft cooking your food – stop it when you think its about done and just let it sit in the insulating dish. Will you let me know what you cook with yours?!
