Shrimp Stir Fry in Garlic Sauce
For some reason I was craving shrimp in garlic sauce all afternoon, so of course I made it my priority to get to the store to buy everything I needed. Also on my to do list were – dry cleaning, do laundry, work out, clean the house…. but, priorities people. This dish was so simple to make and totally guilt-free. The best part is, you have all your veggies and protein in one dish – it’s the perfect thing to make after a long day of work when you are too tired to do much but still want a really good home cooked meal! Shrimp Stir Fry in Garlic Sauce (serves 4) Ingredients:
- 1 tbsp. vegetable oil
- 1 lb. shrimp
- 1 bell pepper, chopped
- 1 cup broccoli
- 1 hot pepper, minced
- 3 tbsp. garlic, minced
- 1 tbsp. brown sugar
- 1 tbsp. corn starch (or 2.5 tbsp. of flour if you don’t have that)
- 1 tbsp. rice vinegar
- 1/4 cup low sodium soy sauce
- 1 cup vegetable stock
- 1 tsp. fresh ground ginger
- 1/2 onion, chopped
- 1, 8 oz. can water chestnuts, rinsed and drained
- 1 8 oz. jar of baby corn, rinsed and drained
- 1/8 tsp. Chinese five spice
- 1 green onion, minced
Directions:
- Whisk together soy sauce, stock, rice vinegar, corn starch, and brown sugar, Chinese five spice, and set aside.
- Heat up 1 tbsp. vegetable oil in a wok, then add broccoli, bell pepper, hot pepper, and onions. Season with salt and pepper, and sauté about 5-6 minutes until the vegetables begin to soften. Add in garlic, water chestnuts, baby corn, ginger, and the soy sauce mixture and bring to a simmer on medium heat. Add in the shrimp and simmer the stir fry until the shrimp is cooked completely.
- Top with green onion and serve!
