Skinny Overnight Oats

There is nothing more annoying to me than getting to work in the morning, not having prepared my breakfast ahead of time, and trying to figure out what I am going to eat that isn’t going to make me feel like crap.  Sure, I would love to devour 3 or 4 cherry iced doughnuts in one sitting, or chow down on some sausage and cheese kolaches, but about 30 minutes later I know I how I will feel, so I try not to.  A girlfriend of mine recently got me onto this e-book called Fit Girl’s Guide, and lucky for me it comes with dozens of super easy, FAST recipes, and one of them happened to be for overnight oats.

At first I was reluctant, seeing as I really dislike oatmeal and normally you would have to starve me for days before I would eat it, but I am trying to follow the 28 day guide religiously, so I decided to try it out (and make my boyfriend do it with me).  OH MY GOSH… let me tell you… this baby is like cherry pie on your tongue first thing in the morning.  It’s sweet and tart all at the same time, and just writing about it now, my mouth is watering.  The other plus – it filled me up for about 5 hours, which never happens.  NEVER I tell you!  Oh, and ANOTHER plus – it’s really low-calorie and healthy!!!  Gosh, I am just full of good news today.  When I texted my boyfriend to ask if he liked it around noon, this was his response, “YES! I loved it! And I am still full!!”.  Now do you believe me?

You can even change-up the jars to other pretty colors.  I have a million of these things around the house, I use them for everything.  The ideal size for these oat jars is about 12-16 oz.  Also, you can either stir it up and then store, of keep them looking like pretty parfaits.

Anyway, the fit girls guide is full of awesome recipe ideas and fast meal prep for the week if you are interested. I know it even probably sounds like I am writing a post for them, but I assure you, I’m not.  I just really love this guide and how it lays out your meal plans for the week, taking all the thought out of it.  So, do yourself a favor, make these overnight oats (you can store them well for about 3 days if you want to make a few ahead of time), and I promise you will love them.  You can even alter them a bit by changing up the type of fruit you top it with, or what ever else you want to put in there.

Skinny Overnight Oats

Ingredients
  • ¼ - ⅓ cup old fashioned oats (I use ¼ but add more if you desire)
  • ⅓ cup unsweetened almond milk
  • ½ cup non-fait plain greek yogurt (or full fat, or 2%, whatever you desire)
  • 1 tbsp. chia seeds
  • 1 tsp. almond butter, or peanut butter (optional)
  • ½ cup frozen cherries (or other fruit)
  • Mason Jar
Instructions
  1. Place all ingredients in a mason jar, starting with oats, then almond milk, chia seeds, almond butter, yogurt, then frozen cherries. You can either stir, or leave it like a parfait design. Store in fridge overnight, or up to 3 days.
  2. Enjoy!
