Spicy Black Bean Tacos (Healthy!!!)

It’s always good to try to omit meat from your diet at least a few days a week for so many different health reasons, so I decided to spice things up with a really good vegetarian black bean taco and came up with this gem of a recipe – these tacos are so good, you will forget there is no meat!!  I love when I find a new quick healthy weeknight dinner, and these tacos have such a great smoky flavor and are totally guilt-free.  If you do however want to add meat, I did make one version of these with some lean buffalo meat and I’ll give that variation below as well!

Ingredients:

  • 1 tbsp. grapeseed oil
  • 1/2 sweet yellow onion, diced
  • 1 clove of garlic, minced
  • 1 14 oz. can stewed tomatoes, chop the tomatoes
  • 2 15 oz. cans of black beans, drained and rinsed
  • 1 tsp. chili powder
  • 1 tsp. cumin
  • 1/4 tsp. red chili flakes
  • 4 adobe peppers in chipotle sauce, chopped
  • salt and pepper, to taste
  • Taco toppings – lettuce, cheese, salsa, avocado (desired amount)
  • Whole grain tortillas
  • MEAT OPTION: 1 lb. ground buffalo, additional tsp. cumin, and chili powder, and 2 adobe peppers.

Directions:

  • Heat Grapeseed oil in a non-stick pan.  Add onion and adobe peppers and saute about 5 minutes.  (Option here to add other vegetables like bell pepper, carrot, etc.)
  • Add in black beans and seasonings and saute about 5 minutes.  At this point the beans become a bit dry, add in the can of stewed tomatoes.  Stir occasionally, and cook this down for about another 5-7 minutes.
  • MEAT OPTION: If you want to try the option that includes the meat, follow the instructions above with another step.  While the black beans are cooking, heat up in another pan 1 tsp. grapeseed oil.   Saute the buffalo and 2 chopped adobe peppers, until the meat begins to brown.  Add in the additional 1 tsp. of cumin and 1 tsp. of chili powder.  Once the buffalo is cooked, you can combine the meat and bean mixture, and you have your filling!
  • Serve taco fillings in wheat tortillas with desired amount of toppings and enjoy!!!!
