Vegetarian Carne Asada Hash

What do you do when you are stuck in the house waiting for a worker to leave and aren’t able to go pickup dinner? (Usually I would get pizza delivery but I’m trying to turn a new, healthier page :).  So, I did what I do best and gathered whatever I had around and created a new one pot meal of course!  I always have vegetarian stuff on hand – black beans, sweet potato, carrots… so I thought, why not just throw everything together and see what happens?  And ohhhh it turned out soooo gooood!  I really wasn’t expecting to do a blog post with this recipe but it just turned out so darn good I couldn’t resist.  Day 2 of clean eating success!!  This recipe is so healthy and so yummy, it’s almost like a vegetarian chili.  This will definitely be one of my new go to weeknight dinners!!!  One of the best parts… it only took about 15-20 minutes!

Vegetarian Carne Asada Hash

Prep Time: 5 minutes

Cook Time: 20 minutes

Total Time: 25 minutes

Serving Size: 2-3

Vegetarian Carne Asada Hash

Ingredients

  • 2 shallots, minced
  • One sweet potato, diced into 1/4 inch cubes
  • 3 cloves of garlic, minced
  • 1 small eggplant
  • 3 carrots, diced
  • 1, 15 oz. can black beans, drained and rinsed
  • 1 cup vegetable stock
  • 1 1/4 cups tomato sauce
  • 3 tsp. carne asada seasoning
  • salt and pepper, to taste
  • 1/4 tsp. garlic powder
  • olive oil

Instructions

  1. Heat a saute pan (I use my kyocera frying pan) with olive oil and add shallots, garlic, carrots, sweet potato, and eggplant. Season with salt and pepper and saute for about 5-7 minutes, or until the vegetables begin to soften. Add in 3 tsp. carne asada seasoning, 1/2 cup of the tomato sauce, and garlic powder. Cook for a few minutes until the vegetables soak up the sauce, and then add in black beans.
  2. Add 1 cup of vegetable stock and the remainder of the tomato sauce and simmer on low for about 7-10 minutes. If you find here the mash is too dry I just add in more stock or tomato sauce.
  3. This would be great to serve in tortillas!! Enjoy!

    Great meal that you can just throw together! I love those meals that you look in your fridge and figure out how to put them all together to make a great dinner!

    This recipe is AMAZING! So easy to put together, especially for someone like me who is on the go and needs to cook a lot at once. For anyone like me who has a sensitivity to beans, I substituted quinoa and it was delicious! I ate this several days in a row and can’t wait to make it again!! So light and healthy yet filling and tastes so good.
