Banh Mi Sandwiches Three Ways, Featuring Castle Wood Reserve Deli Meat
Sundays are bittersweet for me. Yes, I have to head back to work the next morning, but I love them because it’s the day of the week when we always have friends and family over to watch football, meal prep, and catch up. Food prep is something I do 99% of the time because it allows me so much more freedom during the week when it comes to worrying about lunch, and it helps me not stray from my health goals and resolutions. Today I am really excited to show you guys what I prepped (with the help of my future sister-in-law, thanks Jennifer!) with Castle Wood Reserve deli meat. Also…. I have some SUPER EXCITING NEWS! One of the easiest ways to meal prep for your kids or for yourself is sandwiches. The hard part is figuring out a way to elevate a sandwich so you don’t get bored with the same ole pb&j. Well, never mind, pb&j is always awesome, but I do have some seriously mouthwatering recipes to kick up your typical lunch meat.

Deli meat has gotten quite a bad rap over the last few years due to the nutrition and health movement – which I personally love because it’s forced brands to become more health conscious. Castle Wood Reserve is serious about their deli, and offer whole breast cuts with NO ARTIFICIAL FLAVORS, NO NITRITES, NO NITRATES – which I can totally get behind. For all these reasons, when they approached me to come up with sandwich concepts for their meat, I was ecstatic. So, being that I am from Houston, nothing is more perfect than a play on the traditional Vietnamese Banh Mi.
Look at these beauties!!!! I have to say, it may have been a mistake to make these banh mi’s when I had all the guys over for football. I was supposed to have them prepped for the show in the morning, but they guys loved them so much I had to make more :). Also, no joke, the comments all around were how impressed everyone was with the quality of the meat.
This was my favorite of all the sandwiches, which I was really surprised about. I am not usually the biggest roast beef sandwich kinda girl, but this just got me. The flavors of the horseradish, with the pickled cabbage, caramelized onion, and fresh roast beef, you can’t beat it.
Commence the drool.

Banh Mi Sandwiches Three Ways, Featuring Castle Wood Reserve Deli Meat
Ingredients
Turkey Banh Mi Ingredients:
- Castle Wood Reserve Turkey
- 1 roll small french baguette, or bread of your choice
- Kewpie mayo
- Avocado sliced
- Lettuce
- Radish thinly sliced
Oven Roasted Chicken Banh Mi Ingredients:
- Castle Wood Oven Roasted Chicken Breast
- 1 roll small french baguette, or bread of your choice
- Kewpie mayo
- Carrot julienned
- Cucumber sliced thinly or on a mandolin
- Cilantro
Roast Beef Banh Mi Ingredients:
- Castle Wood Reserve Roast Beef
- 1 roll small french baguette, or bread of your choice
- Horseradish sauce I found a great one on the condiment aisle
- Carrot julienned
- Caramelized onion
- Pickled red cabbage buy pre-made or with these ingredients: 1/2 head of red cabbage, 1 cup water, 1/2 cup apple cider vinegar, 1/2 cup red wine vinegar, 2 tsp. sugar, 1 tsp. salt, instructions below
Instructions
Turkey Banh Mi:
- Spread the kewpie mayo on the bread, and top with turkey, avocado, lettuce, and thin radish.
Oven Roasted Chicken Banh Mi:
- Spread the kewpie mayo on the bread, and top with chicken breast, diced carrot, cucumber, and cilantro.
Roast Beef Banh Mi:
- Spread the horseradish sauce on the bread, and top with roast beef, carrot, caramelized onion, and pickled red cabbage. To make the pickled red cabbage from scratch, combine all the ingredients in a large bowl and let sit at least 30 minutes.
