Banh Mi Sandwiches Three Ways, Featuring Castle Wood Reserve Deli Meat

Turkey Banh Mi Ingredients:
  • Castle Wood Reserve Turkey
  • 1 roll small french baguette, or bread of your choice
  • Kewpie mayo
  • Avocado sliced
  • Lettuce
  • Radish thinly sliced
Oven Roasted Chicken Banh Mi Ingredients:
  • Castle Wood Oven Roasted Chicken Breast
  • 1 roll small french baguette, or bread of your choice
  • Kewpie mayo
  • Carrot julienned
  • Cucumber sliced thinly or on a mandolin
  • Cilantro
Roast Beef Banh Mi Ingredients:
  • Castle Wood Reserve Roast Beef
  • 1 roll small french baguette, or bread of your choice
  • Horseradish sauce I found a great one on the condiment aisle
  • Carrot   julienned
  • Caramelized onion
  • Pickled red cabbage buy pre-made or with these ingredients: 1/2 head of red cabbage, 1 cup water, 1/2 cup apple cider vinegar, 1/2 cup red wine vinegar, 2 tsp. sugar, 1 tsp. salt, instructions below

Method
 

Turkey Banh Mi:
  1. Spread the kewpie mayo on the bread, and top with turkey, avocado, lettuce, and thin radish.
Oven Roasted Chicken Banh Mi:
  1. Spread the kewpie mayo on the bread, and top with chicken breast, diced carrot, cucumber, and cilantro.
Roast Beef Banh Mi:
  1. Spread the horseradish sauce on the bread, and top with roast beef, carrot, caramelized onion, and pickled red cabbage. To make the pickled red cabbage from scratch, combine all the ingredients in a large bowl and let sit at least 30 minutes.
